Crispy Quinoa and Broccoli Patties

- 1 cup cooked quinoa (cooled)
- 1 cup finely chopped steamed broccoli
- 1/3 cup grated Parmesan cheese (or nutritional yeast for vegan)
- 1/4 cup breadcrumbs (gluten-free if needed)
- 2 eggs (or flax eggs for vegan)
- 2 cloves garlic, minced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped parsley
- 2 tbsp olive oil (for pan-frying)
- In a large bowl, mix cooked quinoa, chopped broccoli, Parmesan, breadcrumbs, eggs, garlic, salt, pepper, and parsley until well combined.
- Shape the mixture into 6–8 small patties and place on a parchment-lined tray.
- Heat olive oil in a nonstick skillet over medium heat.
- Pan-fry the patties for 3–4 minutes on each side, until golden brown and crisp.
- Serve warm with your favorite dipping sauce or on a salad.
Notes
- Make sure quinoa is cooled before mixing to help patties hold their shape.
- To make it vegan, use flax eggs and nutritional yeast instead of Parmesan.
- Leftovers can be stored in the fridge for up to 3 days or frozen for later use.
