Crispy Quinoa and Broccoli Patties

Golden on the outside and tender on the inside, these quinoa and broccoli patties are a wholesome and delicious way to enjoy plant-based protein. Perfect as a snack, appetizer, or served with a salad for a nourishing meal.

Ingredients

  • 1 cup cooked quinoa (cooled)
  • 1 cup finely chopped steamed broccoli
  • 1/3 cup grated Parmesan cheese (or nutritional yeast for vegan)
  • 1/4 cup breadcrumbs (gluten-free if needed)
  • 2 eggs (or flax eggs for vegan)
  • 2 cloves garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped parsley
  • 2 tbsp olive oil (for pan-frying)

Instructions

  1. In a large bowl, mix cooked quinoa, chopped broccoli, Parmesan, breadcrumbs, eggs, garlic, salt, pepper, and parsley until well combined.
  2. Shape the mixture into 6–8 small patties and place on a parchment-lined tray.
  3. Heat olive oil in a nonstick skillet over medium heat.
  4. Pan-fry the patties for 3–4 minutes on each side, until golden brown and crisp.
  5. Serve warm with your favorite dipping sauce or on a salad.

Notes

  • Make sure quinoa is cooled before mixing to help patties hold their shape.
  • To make it vegan, use flax eggs and nutritional yeast instead of Parmesan.
  • Leftovers can be stored in the fridge for up to 3 days or frozen for later use.
