Crispy Roasted Fingerling Potatoes with Thyme

Golden and crispy fingerling potatoes, roasted to perfection with fresh thyme and sea salt. A simple and rustic side dish perfect for any meal.

  • 1 ½ pounds fingerling potatoes, halved lengthwise
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • 45 sprigs fresh thyme
  • 2 cloves garlic, smashed (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse and dry the fingerling potatoes thoroughly. Slice them lengthwise.
  3. In a large mixing bowl, toss the potatoes with olive oil, sea salt, black pepper, and fresh thyme sprigs. Add garlic if using.
  4. Arrange the potatoes cut-side down on a baking sheet lined with parchment paper, ensuring they’re in a single layer for even roasting.
  5. Roast in the preheated oven for 25–30 minutes, or until the potatoes are golden brown and crispy on the edges.
  6. Remove from the oven and let them cool for 2–3 minutes. Discard thyme sprigs before serving.
  7. Serve warm, optionally garnished with more fresh thyme.

Notes

  • Use parchment paper to prevent sticking and promote even browning.
  • Optional garlic adds depth of flavor but can be omitted.
  • For extra crispiness, don’t overcrowd the baking sheet.
