Golden, crunchy zucchini bites with creamy feta cheese—lightly seasoned, pan-fried to perfection, and perfect as a savory snack or party appetizer.

  • 2 medium zucchinis, grated
  • 1/2 teaspoon salt
  • 1/2 cup crumbled feta cheese
  • 1/3 cup breadcrumbs (plus more for coating)
  • 1 egg, beaten
  • 2 tablespoons chopped parsley
  • 1 garlic clove, minced
  • 1/4 teaspoon black pepper
  • Olive oil for frying

Instructions

  1. Grate the zucchini and toss with salt in a bowl. Let sit for 10 minutes to release moisture.
  2. Squeeze out excess liquid using a cheesecloth or clean kitchen towel.
  3. In a mixing bowl, combine drained zucchini, feta, breadcrumbs, egg, parsley, garlic, and black pepper.
  4. Mix until well combined and shape into small bite-sized balls.
  5. Lightly roll each ball in additional breadcrumbs for an extra crispy coating.
  6. Heat olive oil in a skillet over medium heat. Fry bites in batches, turning occasionally, until golden and crispy—about 4–5 minutes per batch.
  7. Drain on paper towels and serve warm with dipping sauce of choice.
