- 2/3 cup powdered sugar
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 1/4 cup unsweetened cocoa powder
- 1 1/4 cups all-purpose flour
- 1/2 cup semi-sweet chocolate chips
- 3 tablespoons heavy cream
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream the softened butter and powdered sugar in a mixing bowl until fluffy and pale.
- Add vanilla extract and salt, mixing until fully combined.
- Sift in cocoa powder and flour. Mix until a soft dough forms.
- Transfer the dough to a piping bag fitted with a large star tip.
- Pipe rosettes or swirls onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes, or until set. Let cookies cool completely on a wire rack.
- To prepare the filling, heat chocolate chips and heavy cream in a microwave-safe bowl in 20-second intervals, stirring until smooth.
- Let ganache cool slightly until thickened to a spreadable consistency.
- Spread ganache on the flat side of half the cookies and sandwich with the remaining cookies.
Notes
- For a neater appearance, chill the piped cookies for 10 minutes before baking.
