Double Chocolate Swirl Sandwich Cookies

Decadent chocolate swirl cookies filled with rich chocolate ganache, perfect for special occasions or a cozy indulgence. These elegant sandwich cookies melt in your mouth with every bite.

  • 1 cup unsalted butter, softened
  • 2/3 cup powdered sugar
  • 1 1/2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened cocoa powder
  • 1 1/4 cups all-purpose flour
  • 1/2 cup semi-sweet chocolate chips
  • 3 tablespoons heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream the softened butter and powdered sugar in a mixing bowl until fluffy and pale.
  3. Add vanilla extract and salt, mixing until fully combined.
  4. Sift in cocoa powder and flour. Mix until a soft dough forms.
  5. Transfer the dough to a piping bag fitted with a large star tip.
  6. Pipe rosettes or swirls onto the prepared baking sheet, spacing them 2 inches apart.
  7. Bake for 10-12 minutes, or until set. Let cookies cool completely on a wire rack.
  8. To prepare the filling, heat chocolate chips and heavy cream in a microwave-safe bowl in 20-second intervals, stirring until smooth.
  9. Let ganache cool slightly until thickened to a spreadable consistency.
  10. Spread ganache on the flat side of half the cookies and sandwich with the remaining cookies.

Notes

  • For a neater appearance, chill the piped cookies for 10 minutes before baking.
  • Store cookies in an airtight container at room temperature for up to 3 days.
  • Use dark chocolate for a more intense filling flavor.
