Ingredients

Scale

Dough:

  • 4 cups (500g) all-purpose flour
  • 3 teaspoons (9g) active dry yeast
  • 1/3 cup (75g) sugar
  • 2 eggs
  • 7 tablespoons (100g) butter at room temperature
  • 3/4 cup (200ml) milk
  • 1 tablespoon alcoholic liqueur (optional, adds a crispy coating to the dreams’ exterior while keeping the insides soft)
  • Pinch of salt

Cream:

  • 2 cups (500ml) milk
  • 1/2 cup (100g) egg yolks
  • 1/5 cup (40g) sugar
  • 1/3 cup (50g) cornstarch
  • 1 tablespoon vanilla extract
  • Pinch of salt
  • 3.5 ounces (100g) white chocolate
  • 7 tablespoons (100g) butter at room temperature

Caramel Topping:

  • 1 3/4 cups (350g) sugar
  • About 3 1/3 tablespoons (100ml) water

Instructions

  1. Prepare the Dough: In a stand mixer bowl, combine all the dough ingredients and knead on low-medium speed for about 12 minutes until it forms a smooth, uniform, and slightly sticky dough. Cover the bowl and let the dough rise for about 1 hour or until it doubles in size.
  2. Prepare the Cream: Whisk together the egg yolks, cornstarch, vanilla extract, and sugar in a bowl. Meanwhile, heat the milk in a saucepan until hot. Pour the hot milk gradually into the yolk mixture while whisking immediately to temper the eggs. Return the mixture to the saucepan and cook over medium heat, stirring constantly until the cream thickens. Remove from heat, then add butter and white chocolate; stir until fully combined. Cover the cream with plastic wrap, touching the surface to prevent skin formation, and refrigerate to chill.
  3. Shape and Proof the Dough Balls: Cut parchment paper into squares. Divide the dough into balls weighing 1.5 to 1.75 ounces (45-50g), shape each ball smoothly, and place them on individual parchment squares. Allow the dough balls to rise again for about 1.5 hours or until they double in size.
  4. Fry the Dough: Heat frying oil to 320-340°F (160-171°C). Carefully lower the dough balls into the hot oil and fry for approximately 3 minutes on each side until golden and cooked through. Remove and drain on paper towels. Allow them to cool slightly before filling.
  5. Fill the Dreams: Transfer the chilled cream to a piping bag fitted with a small tip. Poke a hole into each fried dough ball and fill with the cream generously.
  6. Prepare Caramel Topping: In a saucepan or skillet over medium heat, combine sugar and water. Stir gently until the sugar dissolves and caramelizes into a rich amber color. Once caramel forms, transfer it to another pan off heat to stop cooking and let it thicken slightly.
  7. Coat with Caramel: Gently dip each filled dream into the hot caramel, ensuring an even coating. Shake off any excess caramel to avoid pooling. Place the coated dreams on parchment paper and let them cool until the caramel hardens into a crisp shell.
  8. Serve: Serve the Dreams Creme Brulee with care and enjoy the contrast of textures and flavors between the crispy caramel exterior, soft fried dough, and creamy filling.

Notes

  • Using an alcoholic liqueur in the dough is optional but recommended as it adds a unique flavor and a crispy coating to the dough’s exterior.
  • Maintain oil temperature carefully when frying to ensure even cooking without burning.
  • The caramel should be used while still hot for easy coating but allowed to cool to form a crisp shell.
  • For best results, chill the cream thoroughly before filling to keep its shape inside the warm dough.
  • Handle the caramel with caution as it reaches very high temperatures and can cause burns.
