Sauce and Base
- 1 can full-fat coconut milk (13.5 fl oz.)
- 1/4 cup low sodium chicken broth
- 3 Tbsp red curry paste
- 2 Tbsp peanut butter
- 2 cloves garlic (grated)
- 1 tsp grated ginger
- 2 Tbsp soy sauce
- 1 Tbsp fish sauce
- 1.5 Tbsp honey
- 1/2 lime (juiced)
- 1 tsp sesame oil
Vegetables
- 1 cup spinach (packed)
- 3 oz. mushrooms (sliced)
Dumplings and Toppings
- 18–20 frozen potstickers or gyozas
- Chopped green onions (for garnish)
- Sesame seeds (for garnish)
- Chili oil (for drizzling)
Serving
- White rice (steamed, for serving)
- Prepare the sauce: In a 9×13-inch baking dish, whisk together the full-fat coconut milk, low sodium chicken broth, red curry paste, peanut butter, grated garlic, grated ginger, soy sauce, fish sauce, honey, lime juice, and sesame oil until the mixture is smooth and well combined.
- Add vegetables: Stir in the packed spinach and sliced mushrooms, ensuring they are evenly coated with the sauce throughout the dish.
- Arrange dumplings: Place the frozen potstickers or gyozas directly into the sauce in a single layer, making sure none overlap; spoon some of the sauce over the dumplings to coat their tops.
- Bake covered: Cover the baking dish tightly with aluminum foil and bake in a preheated oven at 375°F (190°C) for 27–32 minutes, until the dumplings are heated through and tender.
- Crisp the tops: Remove the foil for the final 5 minutes of baking to allow the dumplings to become extra crispy on top.
- Garnish and serve: Once out of the oven, sprinkle with chopped green onions and sesame seeds, drizzle with chili oil, and serve hot alongside steamed white rice.
Notes
- Using frozen potstickers or gyozas makes this a quick and convenient recipe.
- Adjust the amount of chili oil based on your preferred spice level.
- Ensure the dumplings are arranged in a single layer without overlapping for even cooking.
- For a vegetarian version, substitute chicken broth with vegetable broth and omit fish sauce or use a vegetarian alternative.
- Make sure to remove the foil toward the end of baking to achieve crispy dumpling tops.
