  • 1/4 cup chicken broth
  • 1/4 cup soy sauce
  • 2 tbsp honey

Instructions

  1. Prepare the sauce: In a small bowl, whisk together the cornstarch, chicken broth, soy sauce, and honey until well combined, then set aside.
  2. Cook the chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced chicken and season with salt and pepper. Sauté for 3-5 minutes until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside on a separate plate.
  3. Sauté the vegetables: Reduce the heat to medium-high and add the remaining 1 tablespoon of olive oil to the skillet. Add broccoli, yellow and red bell peppers, and shredded carrots. Cook while stirring occasionally until the vegetables are tender yet still crisp, about 4-5 minutes.

  5. Combine chicken and sauce: Return the cooked chicken to the skillet. Pour in the prepared stir fry sauce and stir well to coat the chicken and vegetables evenly. Bring the mixture to a boil, stirring occasionally. Allow it to boil for about 1 minute so the sauce thickens.
