			Chicken Marinade
- 1 lb boneless and skinless chicken breast or thighs, cut into ¼ inch thick strips

- 1 tablespoon dark soy sauce or low sodium soy sauce

- 1 tablespoon peanut oil

- 1 tablespoon cornstarch

- ¼ teaspoon ground black pepper

- ¼ teaspoon granulated garlic

Sauce
- ⅓ cup water combined with ¼ teaspoon Knorr Reduced sodium Chicken flavor bouillon

- 2 tablespoon Shaoxing wine

- 2 tablespoons low sodium soy sauce

- 1 teaspoon mushroom flavored dark soy sauce or dark soy sauce

- ¼ cup oyster sauce

- 1 tablespoon sugar

- 1 tablespoon cornstarch

- 2 teaspoons rice wine

- 1 teaspoon Asian toasted sesame oil

- ½ teaspoon red pepper flakes

Stir-fry
- 1–½ pounds broccoli florets

- 3 tablespoons peanut oil

- 3 garlic cloves, minced

- 1 tablespoon fresh ginger, grated

- 3 dried red chilies

- Prepare Broccoli: Microwave the broccoli in a glass bowl covered with plastic wrap with holes poked for ventilation for about 2 minutes until tender.

- Marinate Chicken: Slice the chicken into thin strips. Place chicken in a medium mixing bowl; add the marinade ingredients (dark soy sauce, peanut oil, cornstarch, black pepper, granulated garlic) and stir to combine. Let it sit for at least 15-20 minutes or up to overnight in the refrigerator for best flavor and tenderness.

- Mix Sauce: In a separate small bowl, mix all the sauce ingredients (water with bouillon, Shaoxing wine, low sodium soy sauce, mushroom flavored soy sauce, oyster sauce, sugar, cornstarch, rice wine, toasted sesame oil, red pepper flakes) until cornstarch is fully dissolved into a smooth sauce.

- Heat Wok and Cook Chilies: Heat a 14-inch wok on high heat; add 3 tablespoons peanut oil. Once hot, toss in the dried red chilies and stir-fry until fragrant.

- Cook Chicken: Add the marinated chicken to the wok and stir-fry for about 1 minute, constantly moving the meat around so it browns evenly on all sides but remains rare inside.

- Add Aromatics: Add minced garlic and grated ginger to the wok. Stir-fry for about 30 seconds until fragrant.

- Combine Broccoli: Add the microwaved broccoli florets to the wok and cook for an additional minute, mixing everything well.

- Finish with Sauce: Stir in the prepared sauce mixture continuously, scraping any browned bits from the bottom of the wok. Keep stirring until the sauce thickens into a glossy glaze, about 1 minute.

- Adjust Seasoning and Serve: Taste the dish and adjust salt if needed. Transfer the Chicken Broccoli stir-fry to a serving platter. Serve hot with white rice and Chinese cucumber salad if desired.

		Notes

- Store in an airtight container in the refrigerator for 3-4 days. Allow to cool to room temperature before refrigerating.

- Reheat using microwave, oven (350°F/175°C for 10-15 minutes), or stovetop skillet with a splash of water or chicken stock to prevent drying out.

- Make ahead by marinating the chicken up to 24 hours and chopping broccoli up to 3 days prior.

- Freeze cooked dish after cooling completely in airtight containers for up to 3 months. Thaw overnight in refrigerator before reheating.

- You can substitute chicken with pork or tofu if desired.

- Cook chicken in batches to get a good golden crust and consistent cooking.

- Use any neutral high smoke point oil, like peanut or sunflower oil, for stir-frying.

- Adjust sugar and red pepper flakes according to your preferred sweetness and spice level.

- Fork-stabbing chicken or adding 1 teaspoon baking soda to marinade can help tenderize cheaper cuts of meat.
