Mango Puree

Gelatin Mixture

  • 2 tbsp cold water
  • 1.5 tbsp white granulated sugar
  • 1.5 tbsp powdered gelatin

Serving

  • 4 tbsp evaporated milk or coconut milk (for dairy-free serving option)

Instructions

  1. Prepare Mango Puree: Peel, pit, and slice the ripe mangoes into small pieces. Transfer them to a blender or food processor and blend for at least 1 minute until very smooth to break down the fibers. For an extra smooth texture, strain the puree through a fine sieve.
  2. Bloom Gelatin: In a large bowl, mix cold water and powdered gelatin for 30 to 45 seconds until the gelatin thickens and becomes gel-like. Do not worry if it smells slightly; this will disappear during cooking.
  3. Combine Ingredients: To the gelatin mixture, add the white sugar, coconut milk, and the mango puree. Stir thoroughly until the mixture is smooth and well combined.
  4. Heat Mixture: Transfer the combined mixture to a small pot and heat on medium-low, whisking continuously for 3 to 4 minutes until the gelatin completely dissolves. Avoid letting the mixture simmer or boil to maintain a creamy texture.
  5. Set Pudding: Pour the smooth mixture into four greased serving bowls or silicone molds. Remove any air bubbles by poking the surface and smooth it with a spatula. Optionally, cover the bowls with plastic wrap.
  6. Refrigerate: Refrigerate for at least 6 hours or overnight until the pudding is fully set. Serve chilled with a spoonful of evaporated milk or coconut milk on top for extra creaminess.
