Cookie Dough
- 2–3 packages pre-made chocolate chip cookie dough (about 2 packs if using Sweet Loren’s, or 1 pack if using traditional like Toll House)
Layers
- 2 cups milk chocolate chips or dark chocolate chips (or 3 Hershey’s chocolate bars, chopped)
- 1 cup graham cracker crumbs
- 2 cups marshmallow fluff/creme
- Prep: Remove cookie dough from fridge and let sit for 10-15 minutes to reach room temperature. Line a 9×9 inch square baking pan with parchment paper. Preheat oven to 350°F (175°C).
- Form Base Layer: Press half of the cookie dough evenly into the bottom of the prepared pan using your fingers, making sure there are no holes.
- Add Chocolate: Evenly sprinkle the chocolate chips over the cookie dough layer.
- Add Graham Cracker Crumbs: Sprinkle the graham cracker crumbs evenly over the chocolate layer.
- Spread Marshmallow Fluff: Spoon the marshmallow fluff over the graham cracker crumbs and use a spatula (sprayed with nonstick spray if needed) to spread it into an even layer.
- Top with Remaining Cookie Dough: Spread a thin layer of the remaining cookie dough on top of the marshmallow fluff. Press the dough flat between your fingers and lay it in rows over the marshmallow, allowing some marshmallow to show through for best texture.
- Bake: Bake in the preheated oven for 25-30 minutes until the cookie bars are set and golden brown. Watch closely during the last 10 minutes to prevent burning on the edges and marshmallow.
- Cool & Serve: Allow the s’mores bars to cool for at least two hours to set properly, then cut into 16 squares using a sharp knife.
