Enoki Beef Rolls are a delicious Japanese-inspired dish featuring thinly sliced beef wrapped around delicate enoki mushrooms, simmered in a savory dashi-based sauce with caramelized onions and finished with soft scrambled eggs. This quick and flavorful recipe makes a perfect light meal served with steamed rice.

Ingredients

Scale

Beef Rolls

  • 12 slices thinly sliced beef
  • 1 pack enoki mushrooms (split into 12 pieces)
  • 1/2 small yellow onion, sliced
  • 2 large eggs

Sauce

  • 1 cup dashi broth (prepared from dashi powder or homemade)
  • 2 tablespoons mirin
  • 3 tablespoons soy sauce
  • 1/2 tablespoon sugar
  • 1/4 teaspoon black pepper

Garnish

  • 1 stalk green onion, diced
  • 1 tablespoon sesame seeds
  • 1 tablespoon olive oil (for cooking onions)

Instructions

  1. Prep the enoki beef rolls: Divide the enoki mushrooms into small bunches, about one bunch per beef slice. Roll each bunch tightly with a single slice of beef to form individual beef rolls.
  2. Mix the sauce: In a small bowl, combine dashi broth, mirin, soy sauce, sugar, and black pepper. Stir until the sugar is dissolved to create the savory-sweet sauce.
  3. Cook the onions: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions and cook until they become slightly browned, caramelized, and translucent, approximately 3 to 5 minutes.
  4. Add the enoki beef rolls and sauce: Arrange the prepared beef rolls in a single layer over the caramelized onions in the skillet. Drizzle the sauce evenly over the beef rolls. Cover the skillet and let cook for 3 minutes, then flip the beef rolls over and cook for an additional 1 to 2 minutes to ensure they are cooked through.
  5. Add the egg: Lightly scramble the eggs in a separate bowl. Pour the scrambled eggs over the beef rolls in the skillet. Cover and simmer gently until the eggs are fully cooked, about 2 minutes.
  6. Serve: Garnish the enoki beef rolls with diced green onion and toasted sesame seeds. Serve hot alongside steamed rice for a complete meal. Enjoy!

Notes

  • Use thinly sliced beef suitable for rolling, such as ribeye or sirloin cuts.
  • Dashi broth can be substituted with vegetable or chicken stock for a different flavor base.
  • Be careful not to overcook the eggs; they should remain tender and soft.
  • Serving suggestion: pair with steamed jasmine or short-grain rice.
  • To speed up prep, you can pre-slice the onions and prepare the sauce in advance.
