Ingredients

Scale

Sandwich Ingredients

  • 2 telera or bolillo rolls
  • 1 lb boneless skinless chicken breast or thighs
  • 1 tbsp chipotle in adobo (or marinade of choice)
  • 1 avocado, sliced
  • 1/2 cup refried beans
  • 1/2 cup shredded lettuce
  • 1 tomato, sliced
  • 1/4 onion, thinly sliced
  • 1/4 cup pickled jalapeños
  • 1/4 cup queso fresco or mozzarella
  • 2 tbsp mayonnaise or crema
  • Salt and pepper to taste
  • Olive oil for cooking

Marinade Ingredients

  • Lime juice (from 1 lime)
  • 2 cloves garlic, minced
  • Salt (to taste)

Instructions

  1. Marinate the Chicken: In a bowl, combine the chicken with chipotle in adobo, freshly squeezed lime juice, minced garlic, and salt. Mix well to cover the chicken evenly. Cover and refrigerate for at least 30 minutes to let the flavors develop.
  2. Cook the Chicken: Heat a grill pan or skillet over medium heat and drizzle with olive oil. Cook the chicken for 5 to 6 minutes on each side, or until it reaches an internal temperature of 165°F (74°C) and is fully cooked through. Remove from the heat and let the chicken rest for a few minutes before slicing thinly.
  3. Toast the Bread: Lightly toast the telera or bolillo rolls in a skillet or toaster until the crust is golden brown and crispy but the inside remains soft.
  4. Assemble the Sandwich: Spread a generous layer of warm refried beans on the bottom half of each roll. Spread mayonnaise or crema on the top half. Layer the sandwich starting with sliced chicken, then avocado slices, queso fresco or mozzarella, shredded lettuce, tomato slices, thinly sliced onion, and finally pickled jalapeños.
  5. Serve: Close the sandwich firmly and serve immediately. Enjoy alongside chips, fries, or a fresh green salad for a complete meal.

Notes

  • Marinate the chicken for longer (up to 2 hours) for deeper flavor absorption.
  • Use chicken thighs for juicier, more flavorful meat.
  • Substitute chipotle in adobo with your favorite spicy marinade if preferred.
  • Warm the refried beans before spreading for easier application and enhanced taste.
  • For an extra kick, add a splash of hot sauce or fresh cilantro.
  • Ensure the bread is toasted well enough to hold the moist fillings without becoming soggy quickly.
