Ingredients

Scale

Potatoes

  • 6 medium-sized potatoes, boiled, peeled, and cubed

Spices and Seasonings

  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste

Vegetables & Aromatics

  • 2 tablespoons oil
  • 1 large onion, finely chopped
  • 2 green chilies, sliced
  • 1 tablespoon ginger-garlic paste
  • 3 large tomatoes, pureed
  • Fresh coriander leaves, chopped (for garnish)

Instructions

  1. Heat Oil and Temper Spices: Heat 2 tablespoons of oil in a pan over medium heat. Add 1 teaspoon mustard seeds and 1 teaspoon cumin seeds; let them splutter to release their flavors.
  2. Sauté Onions: Add the finely chopped large onion and sauté until golden brown, enhancing the dish’s aroma and base flavor.
  3. Add Chilies and Ginger-Garlic Paste: Mix in 2 sliced green chilies and 1 tablespoon ginger-garlic paste; cook until the raw smell disappears to infuse the masala deeply.
  4. Cook Tomato Puree: Pour in 3 large pureed tomatoes and simmer for 5-7 minutes until oil separates from the masala, indicating it is cooked well.
  5. Add Spices and Salt: Stir in 1/2 teaspoon turmeric powder, 1 teaspoon red chili powder, 1 teaspoon coriander powder, and salt to taste. Cook the mixture for 2 minutes to meld the spices.
  6. Combine Potatoes with Masala: Add the boiled, peeled, and cubed 6 potatoes to the pan and gently toss to coat them evenly with the prepared masala.
  7. Finish with Garam Masala: Sprinkle 1/2 teaspoon garam masala over the potatoes and mix carefully to distribute the aromatic spices.
  8. Simmer for Flavor Blending: Cook the potato masala on low heat for an additional 5 minutes to allow the flavors to blend and infuse thoroughly.
  9. Garnish and Serve: Garnish with freshly chopped coriander leaves before serving to add freshness and color.

Notes

  • Use medium-sized potatoes for uniform cooking and texture.
  • Adjust green chilies and red chili powder according to your preferred spice level.
  • Fresh tomatoes yield the best flavor, but canned pureed tomatoes can be used if fresh are unavailable.
  • Serve hot with chapati, naan, or steamed rice for a complete meal.
  • For a vegan version, ensure the oil used is vegetable-based and no dairy products are added.
