- 1/2 tsp Salt
Wet Ingredients for Cupcakes
- 1/2 cup Unsalted butter (room temperature)
- 2 TBSP Oil (canola or vegetable)
- 1 cup White granulated sugar
- 2 Large eggs (room temperature)
- 1 tsp Pure vanilla extract
- 1 oz Freeze dried strawberries
- 1 cup Lightly pureed strawberries (about 8–10 medium strawberries)
- 1 tsp White granulated sugar (for pureed strawberries)
- 3/4 cup Buttermilk (room temperature)
For Strawberry Cream Cheese Frosting
- 1 cup Unsalted butter (room temperature)
- 8 oz Cream cheese (room temperature)
- 3 cups Powdered sugar
- 1/4 cup Ground freeze dried strawberries
- 1 tsp Pure vanilla extract
Strawberry Topping
- 6 Strawberries (cut into small pieces)
- 1 tsp White granulated sugar
- Puree Strawberries: Using a food processor, blend 8-10 medium strawberries until lightly pureed with small chunks remaining. Spread the puree on a plate and sprinkle 1 tsp sugar over the top. Let it sit to macerate. Blend 1 oz freeze dried strawberries in a food processor to a fine crumb and set aside.
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with liners. Set aside.
- Mix Dry Ingredients: In a large bowl, sift together all-purpose flour, cake flour, baking powder, baking soda, and salt. Set aside.
- Cream Butter and Sugar: In a mixing bowl, beat 1/2 cup room temperature butter, 2 tablespoons oil, and 1 cup granulated sugar on high speed for 2 minutes. Scrape down the sides of the bowl.
- Add Eggs and Flavors: Add 2 eggs, 1 teaspoon vanilla extract, the ground freeze dried strawberries, and the lightly pureed strawberries to the butter mixture. Mix on medium speed until combined.
- Combine Wet and Dry: Add the sifted dry ingredients alternately with 3/4 cup buttermilk to the wet mixture. Mix on low speed until just combined, being careful not to overmix.
- Fill Muffin Cups: Use a cookie scoop to portion batter evenly into the prepared muffin tin, filling each cup about two-thirds full.
- Bake: Bake for 16-18 minutes or until a toothpick inserted into the center comes out clean. Allow cupcakes to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Prepare Frosting Ingredients: In a large bowl, sift 3 cups powdered sugar. Grind 1/4 cup freeze dried strawberries into a fine powder and set aside.
- Beat Butter and Cream Cheese: Beat 1 cup room temperature unsalted butter on high speed for 2 minutes. Add 8 oz cream cheese and beat on high for 1 minute. Scrape the bowl to ensure even mixing.
- Add Powdered Sugar: Add half of the powdered sugar to the butter and cream cheese mixture and mix on low speed until just combined. Add the rest of the powdered sugar and mix until smooth.
- Add Flavorings: Incorporate the ground freeze dried strawberries and 1 teaspoon vanilla extract into the frosting. Mix on low speed until creamy and fully blended.
- Prepare Strawberry Topping: Chop 6 medium strawberries into small pieces and place them in a small bowl. Sprinkle 1 teaspoon sugar over them and let sit for 5 minutes to macerate.
- Decorate: Once cupcakes are completely cooled, frost generously with the strawberry cream cheese frosting. Top each cupcake with a spoonful of the macerated strawberry pieces.
Notes
- Room temperature ingredients ensure a smooth batter and frosting.
- Do not overmix the batter to prevent dense cupcakes.
- Freeze dried strawberries add intense strawberry flavor without adding moisture.
- Let cupcakes cool fully before frosting to avoid melting the frosting.
- For extra strawberry flavor, gently fold some chopped fresh strawberries into the batter.
