Mixture Ingredients
- 1 cup unsalted pistachios (roughly chopped, reserve a few for garnish)
- 1 cup pitted dates (Medjool or your favorite variety, roughly chopped)
- 1 cup Greek yogurt (thick)
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
Chocolate Coating
- 1 cup dark chocolate chips
- 1–2 teaspoons vegetable oil
- Prepare the Mixture: In a food processor, combine the chopped pistachios, dates, Greek yogurt, vanilla extract, and salt. Process the mixture until it forms a sticky and uniform mass. If the mixture feels too dry or crumbly, add an extra tablespoon of Greek yogurt gradually to achieve the right consistency for rolling.
- Form the Bites: Using a small spoon or cookie scoop, roll the mixture into balls about 1 inch in diameter. Place each ball directly onto a parchment-lined baking tray. Once all balls are formed, transfer the tray to the freezer and freeze for about 1 hour to let them firm up.
- Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips with 1-2 teaspoons of vegetable oil to ensure smooth melting. Microwave in 30-second intervals, stirring well between each interval until the chocolate is fully melted and silky smooth. Alternatively, melt the chocolate using a double boiler on the stove, stirring frequently until smooth.
- Coat with Chocolate: Remove the frozen bite balls from the freezer. Dip each ball carefully into the melted chocolate using a fork or toothpick, allowing excess chocolate to drip off. Place the chocolate-coated bites back on the parchment-lined tray. Before the chocolate sets, sprinkle a few reserved chopped pistachios on top of each bite for added texture and garnish.
- Final Freeze: Return the tray with the chocolate-coated bites to the freezer for an additional 30 minutes to allow the chocolate to set firmly and the bites to fully harden. Once set, they can be stored in an airtight container in the freezer or refrigerator until ready to serve.
Notes
- Use thick Greek yogurt to help bind the mixture without adding too much moisture.
- For ease in rolling, slightly dampen your hands or use a small cookie scoop.
- You can substitute vegetable oil with coconut oil for a slight coconut flavor in the chocolate coating.
- Store the bites in the freezer for best texture, but they can also be kept refrigerated if consumed within a few days.
- Feel free to experiment with other nuts or dried fruits to customize your bites.
