Garlic Herb Butter Baked Potatoes

Crispy golden potatoes roasted to perfection and split open to reveal a fluffy interior, melting with garlic herb butter and sprinkled with parsley for the ultimate savory side dish.

  • 6 medium Yukon Gold or Russet potatoes
  • 4 tablespoons unsalted butter, softened
  • 2 garlic cloves, minced
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • Optional: grated Parmesan cheese for topping

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking dish with parchment paper.
  2. Wash and scrub potatoes, then pat dry. Rub each potato with olive oil and a pinch of salt.
  3. Place potatoes on the baking dish and bake for 45–55 minutes, or until tender when pierced with a fork.
  4. While the potatoes bake, mix butter with minced garlic, parsley, salt, and pepper in a small bowl.
  5. Remove baked potatoes and carefully slice each one lengthwise without cutting all the way through.
  6. Gently press the ends to open the potato and fluff the insides with a fork.
  7. Add a generous spoonful of garlic herb butter into each potato, allowing it to melt into the hot center.
  8. Optional: sprinkle with grated Parmesan and broil for 2–3 minutes for a crisp, cheesy finish.
  9. Serve hot, garnished with extra parsley if desired.

Notes

  • Yukon Gold potatoes provide a creamier texture, while Russets give a fluffier interior.
  • Herb butter can be made ahead and stored in the fridge for up to a week.
  • Try adding chives or thyme for extra flavor.
  • Serve alongside grilled meats, fish, or as a hearty vegetarian main.
