Garlic Herb Chicken with Creamy Dijon Sauce

Tender, juicy chicken breasts pan-seared and finished with a velvety garlic herb Dijon cream sauce. This rich and flavorful dish is elegant enough for entertaining yet simple enough for a weeknight dinner.

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, melt butter and sauté garlic for 1 minute.
  4. Stir in chicken broth, scraping up any browned bits.
  5. Add Dijon mustard, cream, and thyme. Simmer for 3–4 minutes until sauce thickens slightly.
  6. Return chicken to the skillet and spoon sauce over top. Simmer for another 2–3 minutes.
  7. Garnish with fresh parsley and serve immediately with your choice of side.

Notes

  • For extra flavor, marinate the chicken in olive oil and herbs for 30 minutes before cooking.
  • Pairs well with mashed potatoes, rice, or roasted vegetables.
  • Use a meat thermometer to ensure chicken reaches 165°F internally.
