This garlic herb flatbread pizza is a simple yet vibrant dish featuring crispy flatbread, gooey mozzarella, juicy cherry tomatoes, and fresh herbs. Perfect as an appetizer, light meal, or party platter, it’s fast, flavorful, and baked to golden perfection.

  • 2 pieces of store-bought or homemade flatbread
  • 1 1/2 cups shredded mozzarella cheese
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional: crushed red pepper flakes for heat

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment or lightly grease it.
  2. In a small bowl, mix olive oil, minced garlic, oregano, salt, and pepper.
  3. Place flatbreads on the baking sheet and brush evenly with the garlic oil mixture.
  4. Sprinkle mozzarella cheese over each flatbread, followed by cherry tomato halves.
  5. Bake for 10–12 minutes or until the cheese is bubbly and the edges are golden brown.
  6. Remove from the oven and sprinkle with fresh chopped parsley and optional red pepper flakes.
  7. Slice and serve warm.

  • Use naan or pita if flatbread is unavailable.
  • Customize with toppings like olives, arugula, or goat cheese.
