  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ cup grated Parmesan cheese

Instructions

  1. Preheat Oven – Preheat your oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan to prevent sticking and facilitate even baking.
  2. Prep Potatoes – In a mixing bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, half of the minced garlic, 1 teaspoon Italian seasoning, ½ teaspoon paprika, ¼ teaspoon salt, and ¼ teaspoon black pepper. Spread the seasoned potatoes evenly on one side of the prepared baking pan.
  3. Prep Chicken – Drizzle the chicken breasts with the remaining 1 tablespoon olive oil and rub with the rest of the minced garlic, a pinch of salt (¼ teaspoon), black pepper (¼ teaspoon), and half of the grated Parmesan cheese (¼ cup). Place the chicken breasts on the opposite side of the pan from the potatoes.
  4. Bake – Roast the chicken and potatoes in the preheated oven for 30–35 minutes. Flip the potatoes halfway through cooking to ensure even browning. Bake until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden brown and tender.
  5. Finish – Remove the pan from the oven and brush both the chicken and potatoes with the melted butter. Then sprinkle the remaining Parmesan cheese evenly over the top.
