- 4 large russet potatoes
- 3 tbsp olive oil
- 3 cloves garlic, minced
- ½ cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
- Salt and black pepper to taste
For the Aioli:
- ½ cup mayonnaise
- 1 small garlic clove, minced
- 1 tbsp lemon juice
- Salt and pepper to taste
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Peel and cut potatoes into thin fries. Soak in cold water for 30 minutes, then drain and pat dry.
- Toss fries with olive oil, minced garlic, salt, and pepper. Spread evenly on the baking sheet.
- Bake for 30–35 minutes, flipping halfway through, until fries are crispy and golden.
- In a small bowl, mix mayonnaise, minced garlic, lemon juice, salt, and pepper to make the aioli.
- Once fries are baked, toss with Parmesan and parsley.
- Serve hot with the creamy aioli on the side.

- Soaking the potatoes helps remove excess starch for crispier fries.
