Garlic Parmesan Fries with Creamy Aioli

Crispy golden fries tossed with fragrant garlic, freshly grated Parmesan, and parsley, served with a smooth, tangy aioli for the ultimate indulgent snack or side.

  • 4 large russet potatoes
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • Salt and black pepper to taste

For the Aioli:

  • ½ cup mayonnaise
  • 1 small garlic clove, minced
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Peel and cut potatoes into thin fries. Soak in cold water for 30 minutes, then drain and pat dry.
  3. Toss fries with olive oil, minced garlic, salt, and pepper. Spread evenly on the baking sheet.
  4. Bake for 30–35 minutes, flipping halfway through, until fries are crispy and golden.
  5. In a small bowl, mix mayonnaise, minced garlic, lemon juice, salt, and pepper to make the aioli.
  6. Once fries are baked, toss with Parmesan and parsley.
  7. Serve hot with the creamy aioli on the side.

Notes

  • Soaking the potatoes helps remove excess starch for crispier fries.
  • Use freshly grated Parmesan for best flavor and texture.
  • Aioli can be prepared ahead and refrigerated for up to 2 days.
