Gourmet Peanut Butter Brownie Bars

Fudgy and chewy peanut butter brownie bars made with wholesome ingredients, topped with fresh berries, nuts, and chocolate for a gourmet finish.

  • 1/2 cup peanut butter (natural or creamy)
  • 1/4 cup unsweetened applesauce
  • 1/2 cup pure maple syrup or honey
  • 1 tsp vanilla extract
  • 1/2 cup oat flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup mini chocolate chips
  • Optional: 1/4 tsp cinnamon or espresso powder
  • Fresh raspberries, red currants (for topping)
  • Crushed pistachios (for topping)
  • Nutella or melted chocolate drizzle (for topping)
  • Mini chocolate truffles or cookies (for topping)
  • Desiccated coconut (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8” baking pan with parchment paper.
  2. In a medium bowl, mix together peanut butter, applesauce, maple syrup, and vanilla until smooth.
  3. Add oat flour, baking soda, salt, and optional spices. Stir to combine.
  4. Fold in chocolate chips.
  5. Spread the batter evenly into the prepared pan and smooth the top.
  6. Bake for 20–22 minutes or until the center is set and edges are lightly golden.
  7. Let cool completely in the pan before slicing.
  8. Once cooled, slice into large squares.
  9. Top each bar with fresh berries, nuts, chocolate drizzle, truffles, or coconut as desired.
  10. Serve chilled or at room temperature.

Notes

  • For a richer flavor, add a pinch of espresso powder or cinnamon.
  • These bars are naturally sweetened and gluten-free if certified oat flour is used.
  • Store in an airtight container for up to 5 days.
