Grilled Beef Kofta Skewers with Fresh Herbs

Juicy beef kofta skewers infused with Middle Eastern spices and fresh herbs, grilled to perfection. Ideal for serving as a flavorful main, appetizer, or as part of a mezze platter.

  • 1 lb ground beef (85% lean)
  • 1/4 cup onion, finely grated
  • 2 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground cinnamon
  • Wooden skewers, soaked in water for 20 minutes

Instructions

  1. In a large bowl, combine ground beef, grated onion, garlic, parsley, cilantro, and all the spices. Mix until fully incorporated but do not overwork the meat.
  2. Divide the mixture into 5–6 portions and mold each around a soaked skewer, shaping into a long oval kofta shape.
  3. Preheat a grill or grill pan to medium-high heat and brush lightly with oil.
  4. Grill koftas for 3–4 minutes per side, or until nicely charred and cooked through.
  5. Serve hot, garnished with extra chopped parsley and a side of yogurt or tahini sauce if desired.

Notes

  • Soaking wooden skewers prevents them from burning on the grill.
  • Rest koftas for a couple of minutes after grilling to retain juices.
  • Serve with flatbread, hummus, or tabbouleh for a complete meal.
  • Use a mix of beef and lamb for a richer flavor variation.
