- 1 lb ground beef (85% lean)
- 1/4 cup onion, finely grated
- 2 garlic cloves, minced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh cilantro, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground cinnamon
- Wooden skewers, soaked in water for 20 minutes
- In a large bowl, combine ground beef, grated onion, garlic, parsley, cilantro, and all the spices. Mix until fully incorporated but do not overwork the meat.
- Divide the mixture into 5–6 portions and mold each around a soaked skewer, shaping into a long oval kofta shape.
- Preheat a grill or grill pan to medium-high heat and brush lightly with oil.
- Grill koftas for 3–4 minutes per side, or until nicely charred and cooked through.
- Serve hot, garnished with extra chopped parsley and a side of yogurt or tahini sauce if desired.
Notes
- Soaking wooden skewers prevents them from burning on the grill.
- Rest koftas for a couple of minutes after grilling to retain juices.
- Serve with flatbread, hummus, or tabbouleh for a complete meal.
- Use a mix of beef and lamb for a richer flavor variation.
