Grilled Chicken Fajita Skewers with Fresh Guacamole

Juicy grilled chicken skewers marinated in Mexican spices and threaded with colorful bell peppers and onions, served with creamy homemade guacamole – a bold, smoky, and vibrant dish perfect for cookouts and fiestas.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1.5-inch cubes
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 large white onion, cut into chunks
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Wooden or metal skewers
  • 3 ripe avocados
  • 1 small red onion, finely diced
  • 1 medium tomato, diced
  • 1 jalapeño, finely chopped (optional)
  • 2 tablespoons chopped fresh cilantro
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. In a large bowl, mix olive oil, lime juice, chili powder, cumin, paprika, garlic powder, salt, and pepper. Add chicken cubes and toss to coat. Marinate for at least 30 minutes.
  2. Preheat grill to medium-high heat. Soak wooden skewers in water for 20 minutes if using.
  3. Thread marinated chicken, bell peppers, and onion onto skewers, alternating pieces for a colorful display.
  4. Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and lightly charred.
  5. For the guacamole, mash avocados in a bowl, then stir in red onion, tomato, jalapeño, cilantro, lime juice, and salt. Mix until creamy but slightly chunky.
  6. Serve skewers hot with guacamole on the side and garnish with lime wedges and fresh cilantro.

Notes

  • You can use chicken thighs for a juicier result.
  • Add pineapple chunks to skewers for a sweet twist.
  • Guacamole can be made a few hours ahead; cover tightly with plastic wrap to avoid browning.
  • Serve with warm tortillas for a fajita-style wrap option.
