Grilled Chicken Pesto Ciabatta Sandwich

This grilled chicken pesto ciabatta sandwich is a flavor-packed meal featuring juicy grilled chicken, roasted peppers, creamy avocado, tomato, arugula, and pesto on toasted ciabatta rolls. A fresh, satisfying option for lunch or dinner.

  • 2 ciabatta rolls, sliced
  • 2 grilled chicken breasts, sliced
  • 1/2 cup roasted red and yellow bell peppers, sliced
  • 1 ripe avocado, sliced
  • 1 small tomato, sliced
  • 1 cup arugula
  • 1/4 cup basil pesto (homemade or store-bought)
  • 1 tbsp olive oil (for toasting bread)
  • Salt and black pepper, to taste

Instructions

  1. Lightly brush the inside of the ciabatta rolls with olive oil. Toast in a skillet or grill pan until golden and crisp.
  2. Spread a generous layer of basil pesto on the bottom half of each toasted roll.
  3. Layer arugula, tomato slices, grilled chicken, roasted peppers, and avocado.
  4. Sprinkle with salt and freshly ground black pepper.
  5. Add the top half of the ciabatta, press gently, and slice in half if desired.
  6. Serve immediately with extra pesto on the side.
