Grilled Pineapple with Vanilla Ice Cream and Caramel Drizzle

A tropical dessert dream! These juicy grilled pineapple rings are caramelized to perfection, paired with creamy vanilla ice cream, and drizzled with luscious caramel sauce. A refreshing and elegant dessert that’s both simple and indulgent.

  • 1 fresh pineapple, peeled, cored, and sliced into rings
  • 1 tbsp coconut oil or melted butter
  • 1 tbsp brown sugar
  • 1/4 tsp ground cinnamon (optional)
  • 4 scoops vanilla ice cream
  • 1/4 cup caramel sauce (store-bought or homemade)
  • Fresh mint leaves, for garnish

Instructions

  1. Preheat a grill or grill pan over medium heat.
  2. Brush pineapple slices with coconut oil and sprinkle lightly with brown sugar and cinnamon if using.
  3. Grill pineapple rings for 3–4 minutes per side until caramelized and grill marks appear.
  4. Remove from heat and allow to cool slightly.
  5. Place two grilled pineapple rings on each serving plate.
  6. Top with a scoop of vanilla ice cream.
  7. Drizzle generously with caramel sauce.
  8. Garnish with a fresh mint sprig and serve immediately.
