Grilled Watermelon and Halloumi Salad with Chili & Mint

Juicy grilled watermelon slices and salty halloumi cheese meet in this vibrant summer salad, elevated with sliced green chili, fresh mint, and a drizzle of lime juice. A smoky, spicy, and refreshing dish that hits all the right notes.

Ingredients

  • 4 thick slices watermelon, cut into triangles
  • 8 oz halloumi cheese, sliced
  • 1 tbsp olive oil
  • 1 fresh green chili (jalapeño or serrano), thinly sliced
  • Juice of 1 lime
  • Zest of 1 lime
  • Handful of fresh mint leaves, chopped
  • Salt and black pepper to taste
  • Optional: chili flakes or sumac for garnish

Instructions

  1. Preheat a grill or grill pan over medium-high heat. Lightly brush watermelon and halloumi slices with olive oil.
  2. Grill watermelon for 1–2 minutes per side, just until grill marks appear. Grill halloumi until golden and slightly charred, about 2–3 minutes per side.
  3. Arrange grilled watermelon and halloumi on a serving platter.
  4. Sprinkle with sliced chili, fresh mint, lime zest, and a generous squeeze of lime juice.
  5. Season with salt and black pepper. Garnish with chili flakes or sumac if desired.
  6. Serve immediately as a fresh appetizer or side dish.

Notes

  • Serve with crusty bread or pita for a heartier meal.
  • Use seedless watermelon for best presentation and ease of eating.
  • Substitute fresh basil for mint if preferred.
