- 2 medium zucchinis, thinly sliced lengthwise
- 1 tablespoon olive oil
- 1 cup ricotta cheese
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh basil or parsley
- Salt and black pepper to taste
- Microgreens or baby herbs, for garnish
- Optional: grated Parmesan or edible flowers for topping
- Preheat a grill or grill pan over medium-high heat.
- Brush zucchini slices lightly with olive oil and grill for 1–2 minutes per side until tender and grill-marked. Set aside to cool.
- In a bowl, mix ricotta, lemon zest, lemon juice, basil, salt, and pepper until smooth and creamy.
- Lay each zucchini strip flat, place a teaspoon of ricotta mixture at one end, and gently roll up.
- Stand the roll-ups upright on a serving platter.
- Drizzle with olive oil and garnish with microgreens, extra lemon zest, and Parmesan or edible flowers if desired.
- Serve chilled or at room temperature.
