Grilled Zucchini Roll-Ups with Lemon Ricotta

Elegant grilled zucchini ribbons rolled around a zesty lemon ricotta filling and topped with microgreens – a fresh, light, and visually appealing appetizer ideal for healthy gatherings or summer parties.

Ingredients

  • 2 medium zucchinis, thinly sliced lengthwise
  • 1 tablespoon olive oil
  • 1 cup ricotta cheese
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh basil or parsley
  • Salt and black pepper to taste
  • Microgreens or baby herbs, for garnish
  • Optional: grated Parmesan or edible flowers for topping

Instructions

  1. Preheat a grill or grill pan over medium-high heat.
  2. Brush zucchini slices lightly with olive oil and grill for 1–2 minutes per side until tender and grill-marked. Set aside to cool.
  3. In a bowl, mix ricotta, lemon zest, lemon juice, basil, salt, and pepper until smooth and creamy.
  4. Lay each zucchini strip flat, place a teaspoon of ricotta mixture at one end, and gently roll up.
  5. Stand the roll-ups upright on a serving platter.
  6. Drizzle with olive oil and garnish with microgreens, extra lemon zest, and Parmesan or edible flowers if desired.
  7. Serve chilled or at room temperature.

Notes

  • Use a mandoline slicer for even zucchini ribbons.
  • Chill the roll-ups for 15 minutes before serving for best texture.
  • Substitute herbed goat cheese for a tangier filling.
