This Healthy Mediterranean Chickpea Salad is a vibrant and nutritious winter salad packed with antioxidants, protein, and fiber. Salad Base

  • 1 1/2 cups canned chickpeas, rinsed and drained
  • 1 cup cabbage, chopped (red or green)
  • 1 cup arugula
  • 1/3 cup pitted olives
  • 1/2 cup beets, peeled and chopped
  • 1 avocado, peeled and chopped
  • 2 scallions, chopped
  • 1 Tbsp walnuts, chopped (optional)

Dressing and Seasoning

  • 2 Tbsp feta cheese, crumbled
  • 1 garlic clove, minced
  • 1/2 lemon, juice of
  • 1 Tbsp olive oil
  • 1 Tbsp basil leaves, chopped
  • Salt and pepper to taste

Instructions

  1. Massage the cabbage: In a large salad bowl, combine the chopped cabbage with the lemon juice and minced garlic. Massage the cabbage gently with your hands until it softens slightly and absorbs the flavors.
  2. Add remaining ingredients: To the bowl, add the rinsed chickpeas, arugula, pitted olives, chopped beets, chopped avocado, scallions, crumbled feta cheese, chopped basil, and olive oil. Season with salt and pepper to taste, considering the saltiness of the feta and olives.
  3. Arrange and serve: For a visually pleasing presentation, place the cabbage and arugula as the base of the salad bowl and arrange the other ingredients on top. However, this step is optional and does not affect the flavor. Serve the salad immediately for the best freshness and texture.
