- 1 lb ground chicken
- 1/3 cup crumbled feta cheese
- 1/4 cup breadcrumbs
- 1 egg
- 2 garlic cloves, minced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh mint, chopped
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil (for searing)
- 1/2 cup Greek yogurt
- 1/4 cup chicken broth
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1 tablespoon chopped fresh mint
- Salt and pepper to taste
- In a large bowl, mix all meatball ingredients until just combined. Form into 1.5-inch balls.
- Heat olive oil in a skillet over medium heat. Sear meatballs on all sides until golden brown and cooked through (about 10–12 minutes). Set aside.
- In the same skillet, whisk together yogurt, broth, lemon juice, olive oil, and mint over low heat until warm and smooth. Do not boil.
- Return meatballs to the pan and coat in sauce. Simmer for 2–3 minutes to combine flavors.
- Garnish with extra feta and mint. Serve warm with rice, couscous, or flatbread.
Notes
- Use ground turkey or lamb as a variation.
- Don’t boil the yogurt sauce or it may separate.
- Serve with warm pita or over a grain bowl for a complete meal.
