Herbed Chicken Meatballs with Feta & Mint Yogurt Sauce

Juicy pan-seared chicken meatballs bursting with fresh herbs and feta, simmered in a creamy mint-yogurt sauce – a Mediterranean-inspired main that’s flavorful, comforting, and fresh all at once.

Ingredients

  • 1 lb ground chicken
  • 1/3 cup crumbled feta cheese
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for searing)
  • 1/2 cup Greek yogurt
  • 1/4 cup chicken broth
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh mint
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix all meatball ingredients until just combined. Form into 1.5-inch balls.
  2. Heat olive oil in a skillet over medium heat. Sear meatballs on all sides until golden brown and cooked through (about 10–12 minutes). Set aside.
  3. In the same skillet, whisk together yogurt, broth, lemon juice, olive oil, and mint over low heat until warm and smooth. Do not boil.
  4. Return meatballs to the pan and coat in sauce. Simmer for 2–3 minutes to combine flavors.
  5. Garnish with extra feta and mint. Serve warm with rice, couscous, or flatbread.

Notes

  • Use ground turkey or lamb as a variation.
  • Don’t boil the yogurt sauce or it may separate.
  • Serve with warm pita or over a grain bowl for a complete meal.
