Ingredients

Scale

Dry Ingredients

  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon

Wet Ingredients

  • 2 large eggs
  • 1 cup Greek yogurt or buttermilk
  • 1/2 cup honey
  • 1/3 cup olive oil or melted butter
  • 1 tsp vanilla extract

Topping

  • Extra oats for topping

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease or line a loaf pan to prevent sticking.
  2. Combine Dry Ingredients: In a large bowl, whisk together the rolled oats, whole wheat flour, all-purpose flour, baking powder, baking soda, salt, and ground cinnamon until well combined.
  3. Mix Wet Ingredients: In a separate bowl, whisk the eggs, Greek yogurt or buttermilk, honey, olive oil or melted butter, and vanilla extract until smooth and fully incorporated.
  4. Combine Wet and Dry: Pour the wet mixture into the dry ingredients and gently stir just until combined. Avoid overmixing to keep the bread tender.
  5. Transfer to Loaf Pan: Spoon the batter into the prepared loaf pan and smooth the top with a spatula. Sprinkle extra rolled oats evenly over the top for texture and visual appeal.
  6. Bake: Place the loaf pan in the preheated oven and bake for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean, indicating the bread is fully baked.
  7. Cool: Remove the bread from the oven and allow it to cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely before slicing and serving.

Notes

  • You can substitute Greek yogurt with buttermilk if preferred for a slightly tangier flavor.
  • For a dairy-free version, use plant-based yogurt and a suitable oil such as melted coconut or vegetable oil.
  • Store leftover bread in an airtight container at room temperature for up to 3 days or freeze for longer storage.
  • Add nuts or dried fruit to the batter for extra texture and flavor if desired.
  • Using rolled oats rather than instant oats gives the bread a hearty texture and nutty flavor.
