Cookie Dough
- 1 cup unsalted butter (Plugrá Block, room temperature)
- 1 cup confectioners’ sugar (sifted)
- 2 large egg yolks (room temperature)
- 1 tsp vanilla extract
- 2 cups all-purpose flour (sifted)
- 1 tsp baking powder
- ¼ tsp fine sea salt
Chocolate Coating
- 2 cups melted chocolate (wafers or chips)
- 1–2 tsp coconut oil or shortening
- Sprinkles (for decoration)
- Preheat Oven and Prepare Baking Sheet: Position a rack in the center of your oven and preheat to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Cream Butter: Place the room temperature butter into the bowl of a stand mixer fitted with the paddle attachment. Beat on high speed until the butter becomes light and fluffy, about 2 minutes, scraping down the bowl once to evenly aerate.
- Add Sugar: Gradually add the sifted powdered sugar to the butter. Start mixing on low speed to avoid sugar flying out, then increase to high. Beat until the mixture is very smooth and light peaks form, scraping down the sides halfway through.
- Incorporate Egg Yolks and Vanilla: Add the egg yolks one at a time, blending thoroughly after each addition to fully integrate. Then add the vanilla extract and mix until smooth.
- Combine Dry Ingredients and Mix: Sift together the all-purpose flour, baking powder, and sea salt. Add this dry mixture to the creamed ingredients gradually, about one-quarter cup at a time, mixing on low speed just until combined. Avoid overmixing to keep cookies tender.
- Pipe the Dough: Fit a piping bag with a large open star tip. Pipe 2-inch long sections of the dough onto the prepared baking sheet, spacing the cookies 1 to 2 inches apart to accommodate spreading.
- Bake: Bake the cookies in the preheated oven for 13 to 15 minutes, or until their edges turn a light golden brown. Remove from the oven and let them cool on the baking sheet for 5 minutes.
- Cool Completely: Transfer the cookies to a wire rack to cool completely before dipping in chocolate to ensure coatings adhere properly and don’t melt.
- Melt Chocolate and Coconut Oil: Melt the chocolate wafers or chips in the microwave in 20-second intervals, stirring well between each, until smooth. Melt the coconut oil or shortening separately and gradually whisk 1 teaspoon at a time into the melted chocolate until the mixture is glossy and slightly thinned.
- Dip and Decorate: Dip each cooled cookie halfway into the melted chocolate mixture, allowing excess to drip off. Place them onto a parchment-lined baking sheet and immediately sprinkle with decorative sprinkles.
- Allow Chocolate to Set: Let the chocolate harden completely at room temperature. For best texture and flavor, allow the cookies to sit at room temperature for 24 hours to fully crisp and for the chocolate coating to properly cure.
Notes
- Room temperature ingredients help to ensure smooth, even mixing and better cookie texture.
- Do not overmix the dough after adding flour to keep cookies tender and light.
- If you prefer, you may substitute shortening for coconut oil in the chocolate coating to achieve a similar melting quality.
- Cookies can be stored in an airtight container at room temperature for up to one week.
- The resting time of 24 hours at room temperature improves crispness and helps the chocolate coating set firmly.
- Use high-quality chocolate for the best flavor and smooth finish.
