Ingredients

Scale

Peach Glaze

  • 2 yellow peaches, pitted and sliced
  • ½ cup (160 g) peach preserves
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic, minced
  • ½ teaspoon kosher salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon red pepper flakes

Chicken

  • 2 pounds boneless, skinless chicken thighs
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 2 tablespoons extra virgin olive oil
  • 1 medium jalapeno pepper, thinly sliced

Instructions

  1. Prepare the Peach Glaze: In a medium bowl, combine the yellow peaches, peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes. Mix well until thoroughly incorporated and set the glaze aside.
  2. Pat the Chicken Dry: Using paper towels, pat the boneless skinless chicken thighs dry to ensure better searing and seasoning adherence.
  3. Season the Chicken: In a small bowl, mix together kosher salt, black pepper, and chili powder. Rub this seasoning evenly over both sides of each chicken thigh.
  4. Cook the Chicken Thighs: Heat 2 tablespoons of extra virgin olive oil in a large nonstick skillet over medium heat. Once hot, add the chicken thighs in a single layer (cook in batches if necessary). Sear the chicken for 5 minutes on one side, then flip and reduce the heat to medium-low. Continue cooking for an additional 5 minutes or until the internal temperature reaches 165°F. Remove the chicken from the skillet and tent with foil to keep warm.
  5. Cook Jalapeño and Peaches: Increase the skillet heat back to medium and add the sliced jalapeño peppers. Cook for 3 minutes to soften and release flavor. Add the sliced peaches and cook for another 3 minutes until the peaches soften.
  6. Add Peach Glaze: Pour the prepared peach glaze into the skillet with the jalapeños and peaches. Stir well to coat all the ingredients evenly in the glaze.
  7. Combine Chicken and Glaze: Return the cooked chicken thighs to the skillet, spooning the glaze generously over the top. Cook for an additional 1-2 minutes until the chicken is heated through and well coated.
  8. Serve Warm: Transfer the chicken with jalapeño peach glaze to plates and serve immediately for a flavorful and comforting dish.

Notes

  • Use ripe yellow peaches for the best sweetness and flavor balance with the heat from the jalapeños.
  • Adjust the amount of red pepper flakes in the glaze or jalapeños according to your preferred heat level.
  • Cooking the chicken in batches prevents overcrowding and ensures proper searing.
  • Serve with rice, quinoa, or a fresh green salad to complete the meal.
  • Leftover chicken and glaze can be refrigerated for up to 3 days and reheated gently on the stovetop.
