Cream Cheese Layer

  • 200 g Cream Cheese (room temperature)
  • ⅛ cup Sweetened Condensed Milk
  • 1 tsp Vanilla Extract
  • 200 g Heavy Cream

Chocolate Ganache

  • 1 cup Dark Chocolate Couverture (or chips)
  • 1 cup Heavy Cream

Rice Crispy Topping

  • 100 g Rice Crispy
  • 1 cup Melted Dark Chocolate
  • Cocoa Powder for dusting
  • Chocolate Milk (for soaking cake)

Instructions

  1. Prepare Dry Ingredients: Sieve all the dry ingredients except sugar (Dutch cocoa, flour, vanilla powder, baking powder, baking soda, and salt) into a large bowl, then mix well to combine evenly.
  2. Whip Eggs and Sugar: In a separate bowl, use a mixer to whip the eggs and sugar until the mixture is soft, fluffy, and has increased three to four times in size, resulting in a pale, aerated batter base.
  3. Combine Wet and Dry Ingredients: Add the vegetable oil and the sifted dry ingredient mixture into the whipped eggs and sugar mixture. Mix thoroughly but gently to combine everything evenly without deflating the batter.
  4. Add Milk Gradually: Pour the milk into the cake batter gradually in three parts, mixing well after each addition, until the batter is smooth and evenly combined.
  5. Bake the Cake: Pour the finished batter into a rectangular casserole or baking pan. Bake in a preheated oven at 175° Celsius (347° Fahrenheit) for 15-20 minutes, or until a toothpick inserted comes out clean.

  10. Pour Ganache Over Cake: Evenly pour the prepared chocolate ganache over the chilled cream cheese layer, spreading gently if needed for uniform coverage.
  11. Prepare Rice Crispy Topping: In a mixing bowl, combine the rice crispy cereal with the melted dark chocolate. Add some cocoa powder, cover the bowl, and shake well to coat all the crispy pieces in chocolate evenly.
