  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 1 cup heavy whipping cream
  • 1/2 cup lemon curd (store-bought or homemade)
  • Crushed graham crackers or shortbread cookies (for garnish)
  • Fresh blueberries (for garnish)
  • Lemon slices (for garnish)
  • Fresh mint leaves (for garnish)

Instructions

  1. In a large bowl, beat cream cheese, powdered sugar, vanilla, lemon zest, and lemon juice until smooth and creamy.
  2. In a separate bowl, whip heavy cream until stiff peaks form.
  3. Gently fold whipped cream into the cream cheese mixture to create a light mousse.
  4. Layer mousse into serving glasses, adding a spoonful of lemon curd between layers.
  5. Chill in the refrigerator for at least 1 hour before serving.
  6. Just before serving, top with crushed cookies, fresh blueberries, a lemon slice, and a sprig of mint.

Notes

  • Use a piping bag for cleaner layers when assembling the mousse.
  • Homemade lemon curd gives a fresher flavor but store-bought works well too.
