Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • Salt, to taste
  • Black pepper, to taste
  • 2 tsp Italian seasoning

Sauce & Garnish

  • 3 cloves fresh garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/2 cup freshly squeezed lemon juice
  • 1/2 cup grated Parmesan cheese
  • 3 tbsp extra virgin olive oil
  • 1 tbsp cornstarch mixed with 2 tbsp cold water
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare Ingredients: Chop the fresh parsley and mince the garlic cloves to have them ready for cooking and garnishing.
  2. Season Chicken: Season both sides of the chicken breasts generously with salt, black pepper, and Italian seasoning to enhance the flavor.
  3. Sear Chicken: Heat the olive oil in a large skillet over medium heat. Place the chicken breasts in the skillet and cook for 6-7 minutes on each side, or until they turn golden brown and are nearly cooked through.
  4. Add Garlic and Broth: Add the minced garlic to the skillet with the chicken and pour in the low-sodium chicken broth. Allow the mixture to simmer gently for 5 minutes, letting the flavors meld and the chicken finish cooking.
  5. Thicken Sauce: Stir together the cornstarch and cold water to create a slurry, then add this to the skillet. Stir continuously until the sauce thickens to a nice consistency, coating the chicken.
  6. Add Lemon and Cheese: Squeeze freshly squeezed lemon juice over the chicken breasts and sprinkle the grated Parmesan cheese on top. Allow the cheese to melt slightly from the heat of the skillet before serving.
  7. Garnish and Serve: Sprinkle the chopped parsley over the finished dish for a fresh, vibrant touch and serve warm.

Notes

  • Use freshly squeezed lemon juice for the best bright, tangy flavor.
  • To ensure even cooking, pound the chicken breasts to an even thickness if needed.
  • You can substitute the Parmesan cheese with Pecorino Romano if preferred for a sharper taste.
  • Serve this dish with a side of steamed vegetables, rice, or pasta to complete your meal.
  • Adjust seasoning with salt and pepper according to your taste preferences.
