- Salt, to taste
- 1/4 tsp fresh cracked black pepper
Other
- 1/3 cup pasta cooking water, reserved
- Prepare Ingredients: Measure and ready all ingredients before cooking. This ensures smooth workflow as the recipe cooks quickly. Reading through all steps ahead helps avoid surprises.
- Cook Pasta: Bring a large pot of water to boil and add ample salt. Cook pasta according to package instructions. Before draining, reserve 1/3 cup of the pasta cooking water to use later in the sauce. Drain pasta and set aside.
- Heat Pan and Butter: Preheat a large pan over medium heat until hot, then add butter to melt.
- Cook Lobster: Add lobster meat to the pan along with a pinch of salt and black pepper, 1/2 tsp tarragon, 1 tsp parsley, and 1 tbsp chives. Toss to coat the lobster in butter and herbs, and cook for 1-2 minutes just until hot. Remove lobster meat from pan and set aside.
- Sauté Garlic: In the same pan, add minced garlic and sauté until fragrant, about 30 seconds to 1 minute, being careful not to burn it.
- Add Reserved Pasta Water: Pour in the reserved pasta cooking water and bring to a gentle simmer. Lower heat to medium-low.
- Make Sauce: Stir in heavy whipping cream, grated Parmesan, remaining 1/2 tsp tarragon, 1 tsp parsley, 1 tbsp chives, 1/4 tsp black pepper and salt to taste. Gently stir and let the sauce warm through and thicken slightly. Taste and adjust seasoning if needed.
- Toss Pasta: Add the cooked pasta into the sauce and toss until well coated.
- Add Lobster and Serve: Gently fold the lobster meat back into the pasta mixture. Toss lightly to combine and serve immediately, garnished with extra herbs if desired.
Notes
- Reserve pasta water before draining to help loosen the sauce and bind it to the pasta.
- Use fresh herbs like tarragon, parsley, and chives for a bright, fresh flavor that complements lobster.
- Cook lobster briefly to avoid toughness—just heat through for best texture.
- Pasta choices like linguini, spaghetti, or bucatini work well to hold the creamy sauce.
- If lobster meat is pre-cooked and refrigerated, warm gently without overcooking.
- The recipe serves two but can easily be doubled for more servings.
- Parmesan cheese gives a savory depth—use good quality freshly grated cheese.
