Instructions

  1. Season and Dredge Chicken: Season the chicken cutlets evenly with salt and black pepper. Then dredge each piece in all-purpose flour, shaking off any excess to ensure a light coating.
  2. Heat Pan and Cook Chicken: In a large skillet over medium heat, add olive oil and butter; swirl the pan to combine and coat the surface. Add the chicken in batches if necessary to avoid overcrowding. Cook each side for 4-5 minutes until golden brown and fully cooked through. Transfer the cooked chicken to a plate, cover to keep warm, and set aside.
  3. Sauté Garlic and Deglaze: To the same skillet, add the minced garlic and sauté for about a minute until fragrant. Pour in the chicken stock and use a wooden spoon to deglaze the pan, scraping up any browned bits stuck to the bottom for added flavor.
