Ingredients

Scale

Main Ingredients

  • 1 lb pork breakfast sausage
  • 1 large yellow onion, chopped
  • 1 (1-pound) loaf of sourdough bread, cut into 1-inch cubes
  • 2 cups shredded Gruyère cheese
  • 1/2 cup grated Parmesan cheese
  • 8 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 tbsp Dijon mustard
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp ground nutmeg

Instructions

  1. Cook the Sausage and Onion: In a skillet over medium heat, cook the pork breakfast sausage and chopped yellow onion until the sausage is browned and the onion is soft. Drain any excess grease and set aside.
  2. Combine Bread and Cheese: In a large bowl, mix together the sourdough bread cubes, cooked sausage and onion mixture, shredded Gruyère cheese, and grated Parmesan cheese. Transfer this mixture evenly into a greased 9×13-inch baking dish.
  3. Prepare the Egg Custard: Using the same large bowl, whisk together the eggs, whole milk, heavy cream, Dijon mustard, salt, black pepper, and ground nutmeg until fully combined.
  4. Assemble and Refrigerate: Pour the egg custard evenly over the bread and sausage mixture in the baking dish. Cover the dish tightly with plastic wrap or foil and refrigerate for at least 8 hours or overnight to allow the bread to soak and flavors to meld.
  5. Preheat and Rest: When ready to bake, preheat your oven to 350°F (175°C). Remove the casserole from the refrigerator and let it sit at room temperature for 30 minutes before baking.
  6. Bake the Casserole: Bake the uncovered casserole in the preheated oven for 50 to 60 minutes until the top is golden brown and the custard is set in the center. Remove from oven and let the casserole rest for 10 minutes before serving to allow it to firm up for easier slicing.

Notes

  • The casserole can be prepared the night before, making it an excellent make-ahead breakfast option for busy mornings.
  • Using sourdough bread adds a nice tangy flavor and sturdy texture that holds up well to soaking.
  • For a milder flavor, you can substitute Gruyère with Swiss cheese or cheddar.
  • Make sure to drain the sausage fat properly to prevent the casserole from being greasy.
  • Letting the casserole rest after baking helps it set and improves slicing.
