Ingredients

Scale

Meatloaf

  • 2 pounds fresh ground beef
  • 1 cup breadcrumbs
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • ¼ cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste

Mushroom Gravy

  • 2 cups fresh mushrooms, sliced
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups beef broth
  • ½ cup heavy cream
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prepare the Oven: Preheat your oven to 350°F (175°C). Grease a casserole dish or line a baking sheet with parchment paper to prevent the meatloaf from sticking during baking.
  2. Mix the Meatloaf: In a large mixing bowl, combine the ground beef, breadcrumbs, finely chopped onion, minced garlic, beaten eggs, ketchup, Worcestershire sauce, dried thyme, dried oregano, salt, and freshly ground black pepper. Mix gently with your hands until just combined, ensuring not to overwork the mixture for a tender texture.
  3. Shape and Bake: Shape the meat mixture into a loaf and place it into the prepared dish. Bake in the preheated oven for 50 to 60 minutes, or until a meat thermometer inserted into the center reads 160°F (71°C).
  4. Prepare the Gravy: While the meatloaf bakes, melt the unsalted butter in a skillet over medium heat. Add the sliced mushrooms and sauté until they are golden brown and fragrant, about 5 to 7 minutes.
  5. Finish the Gravy: Sprinkle the flour over the cooked mushrooms, stirring constantly for 2 minutes to create a roux. Gradually whisk in the beef broth followed by the heavy cream. Continue stirring until the gravy thickens to a smooth, velvety consistency, about 5 to 7 minutes. Season with salt and freshly ground black pepper to taste.
  6. Serve: Remove the meatloaf from the oven and allow it to rest for a few minutes. Slice into thick portions and ladle the warm mushroom gravy over each slice before serving.

Notes

  • Do not overmix the meatloaf ingredients to avoid a dense texture.
  • Use a meat thermometer to ensure the meatloaf is fully cooked to a safe internal temperature of 160°F (71°C).
  • For a lighter option, substitute heavy cream with half-and-half or milk, though the gravy will be less rich.
  • Leftover meatloaf can be refrigerated for up to 3 days or frozen for up to 3 months.
  • Feel free to add chopped fresh parsley to the gravy for a fresh herbal note.
