- 1 tablespoon olive oil
- 1 lb lean ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 zucchinis, sliced into half-moons
- 2 medium tomatoes, chopped
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cumin
- Salt and pepper to taste
- 2 cups cooked white rice
- 1/3 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley
- Heat olive oil in a skillet over medium heat. Add the diced onion and garlic, and sauté until soft and fragrant, about 2–3 minutes.
- Add ground beef to the pan, breaking it up with a spatula. Cook until browned, about 5–6 minutes. Drain any excess fat if needed.
- Stir in zucchini, tomatoes, oregano, cumin, salt, and pepper. Cook for another 6–8 minutes, stirring occasionally, until the zucchini is tender and the flavors meld.
- Spoon cooked white rice into serving bowls. Top with the ground beef and zucchini mixture.
- Garnish with crumbled feta and fresh parsley. Serve warm.
