  • 4 tbsp Olive oil
  • 1 large Onion, peeled and diced
  • 3 cloves Garlic, minced

  • 1 tbsp Turmeric
  • 1/2 tsp Cumin
  • 2 tsp Kosher salt
  • 1/2 tsp Black pepper
  • 1 tsp Dried parsley
  • 1/2 tsp Garlic powder

Main Ingredients

  • 3 cups Chicken stock (or vegetable broth)
  • 2 cups White rice, rinsed
  • 1 tbsp Fresh parsley, chopped

Instructions

  1. Sauté Onion: Peel and slice your onion into small cubes. Heat a large pot or Dutch oven over medium heat with olive oil. Add the onions and sauté until they are soft and slightly golden brown.
  2. Add Garlic: Add the minced garlic to the onions and stir with a wooden spoon until cooked through, being careful not to burn the garlic.
  3. Add Spices: Mix in turmeric, cumin, kosher salt, black pepper, garlic powder, and dried parsley. Cook this mixture for a few minutes to release the spices’ aromas.
  4. Add Rice: Stir in the rinsed white rice until it is well coated with the spice and onion mixture.
  5. Add Broth and Simmer: Pour in the chicken stock or vegetable broth. Increase heat to medium-high and let it come to a gentle boil. Cover the pot with a lid and reduce heat to the lowest setting. Cook the rice for 20 minutes.
  6. Fluff and Rest: After 20 minutes, remove the lid and fluff the rice gently with a fork. Cover again and let it rest for 10 minutes before serving.
  7. Garnish: Sprinkle fresh chopped parsley on top before serving.
