Ingredients

Scale

Apple Filling

  • 2 cups peeled, cored, and diced apples (about 2 medium-sized apples)
  • 1/3 cup granulated sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/2 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 2 tablespoons butter, melted

Pie Crust

  • 1 package of store-bought refrigerated pie crusts (contains 2 crusts total)

Streusel Topping

  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/4 cup cold butter, cubed (salted or unsalted)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Finishing

  • Powdered sugar, for dusting

Instructions

  1. Preheat Oven and Prepare Muffin Tin: Preheat your oven to 375°F (190°C). Spray nonstick spray in each cavity of your muffin tin. Optionally, add a strip of parchment paper in each cup to help with removing the pies after baking.
  2. Make the Apple Filling: In a mixing bowl, combine diced apples, granulated sugar, ground cinnamon, ground nutmeg, melted butter, lemon juice, and cornstarch. Toss everything together until the apples are evenly coated with the sugar and spices.
  3. Cut Pie Crust Circles: Roll out one of the pie crusts on a lightly floured surface. Use a 3.5 to 4-inch round cookie cutter or a glass to cut out circles slightly larger than the muffin tin openings. Repeat with the second pie crust, aiming for about 12 circles total.
  4. Shape Pie Crust into Muffin Tin: Press each pie crust circle gently into the muffin tin cups, molding them to the shape of the cups. Trim any excess dough hanging over the edges. Ensure that the parchment paper strip is still visible for easy removal.
  5. Prepare the Streusel Topping: In a separate bowl, combine the all-purpose flour, brown sugar, cold cubed butter, ground cinnamon, and salt. Use a pastry cutter or your fingers to mix until coarse crumbs form.
  6. Assemble the Mini Pies: Fill each dough-lined muffin cup with the apple filling. Sprinkle the prepared cinnamon streusel topping evenly over each filled cup.
  7. Bake: Place the muffin tin in the preheated oven and bake for about 30 minutes or until the streusel topping is golden and crispy and the filling is bubbly.
  8. Cool the Pies: Remove the mini apple pies from the oven. Let them cool in the tin for a few minutes, then carefully transfer them onto a wire rack to cool completely.
  9. Serve and Garnish: Once cooled, dust the mini pies with powdered sugar. Serve as is, or with optional vanilla ice cream or caramel sauce drizzled on top for extra indulgence.

Notes

  • Using parchment paper strips in the muffin cups makes removal easier without breaking the mini pies.
  • Ensure apples are well coated with cornstarch to thicken the filling as it bakes.
  • Cold cubed butter in streusel helps create a crumbly texture when baked.
  • Store any leftovers in an airtight container for up to 3 days or freeze for longer storage.
  • Adjust sweetness to taste by varying the amount of granulated or brown sugar used.
