Mint Lime French Macarons

Delicate mint-green macaron shells filled with a creamy, zesty lime buttercream – these refreshing French treats are crisp on the outside, chewy inside, and bursting with citrus and herbal notes perfect for summer parties or elegant dessert tables.

  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 3 large egg whites, room temperature
  • 1/4 cup granulated sugar
  • 1/2 teaspoon cream of tartar
  • Green gel food coloring (optional)
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 2 teaspoons lime zest
  • 1 tablespoon lime juice
  • 1/2 teaspoon mint extract
  • 12 teaspoons heavy cream, if needed

Instructions

  1. Sift together almond flour and powdered sugar into a bowl. Set aside.
  2. In a clean mixing bowl, beat egg whites until foamy. Add cream of tartar and gradually beat in granulated sugar until stiff peaks form. Add green coloring if using.
  3. Fold in dry ingredients gently until batter flows like lava and forms ribbons.
  4. Pipe small rounds onto a parchment-lined baking sheet. Tap the sheet to release air bubbles.
  5. Let macarons sit at room temperature for 30–60 minutes until a skin forms.
  6. Bake at 300°F (150°C) for 15–17 minutes. Cool completely before filling.
  7. For buttercream, beat butter until creamy. Add powdered sugar, lime zest, lime juice, mint extract, and cream. Beat until smooth.
  8. Pipe or spread filling onto half the macaron shells, then sandwich with the other halves.
  9. Chill for 24 hours to mature for best texture. Bring to room temp before serving.

Notes

  • Use aged egg whites for more stable meringue.
  • Don’t skip the resting period – it’s crucial for smooth tops.
  • Macarons taste best after maturing in the fridge overnight.
