Molten Chocolate Lava Cake

Rich and decadent individual chocolate cakes with a warm, gooey molten center, perfect for an elegant dessert served with powdered sugar, berries, or chocolate sauce.

  • 1/2 cup (1 stick) unsalted butter
  • 6 oz semi-sweet chocolate, chopped
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 1/8 tsp salt
  • 2 tbsp all-purpose flour
  • Powdered sugar, for dusting
  • Optional: chocolate sauce or berries for serving

Instructions

  1. Preheat oven to 425°F (220°C). Grease 4 ramekins (6 oz) with butter and lightly dust with cocoa powder.
  2. In a microwave-safe bowl, melt butter and chocolate together in 30-second intervals, stirring until smooth.
  3. In another bowl, whisk eggs, egg yolks, sugar, and salt until thick and pale.
  4. Gently fold the chocolate mixture into the egg mixture.
  5. Sift in the flour and stir until just combined.
  6. Divide the batter evenly among the ramekins.
  7. Place ramekins on a baking sheet and bake for 12–13 minutes, until the edges are set but the center is still soft.
  8. Let rest for 1 minute. Run a knife around the edges, then carefully invert each ramekin onto a plate.
  9. Dust with powdered sugar and serve immediately with chocolate drizzle or fresh fruit.

Notes

  • Use high-quality chocolate for the best flavor and texture.
  • Do not overbake, as the center should remain molten.
  • Can be prepared ahead and stored in the fridge; bake just before serving.
