Molten Red Velvet Chocolate Chip Cookies

Decadent red velvet cookies with a soft, chewy texture and rich molten chocolate centers. Loaded with semi-sweet chocolate chips, these indulgent treats are the perfect fusion of cookie and lava cake.

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp red food coloring
  • 1 1/4 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup semi-sweet chocolate chips
  • 8 squares of baking chocolate or chocolate truffles (for molten center)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add egg, vanilla, and red food coloring. Beat until well combined.
  4. In a separate bowl, whisk flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet, mixing until just combined.
  6. Fold in the chocolate chips.
  7. Scoop about 2 tablespoons of dough and flatten slightly. Place a square of chocolate in the center and wrap the dough around it, sealing completely.
  8. Place on baking sheet with enough space between each cookie. Chill for 10 minutes for best results.
  9. Bake for 10–12 minutes until edges are set but centers are still soft.
  10. Let cool on baking sheet for 5 minutes before transferring. Enjoy warm for the gooey molten center.
