- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
 
- In a mixing bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
 
- Add egg, vanilla, and red food coloring. Beat until well combined.
 
- In a separate bowl, whisk flour, cocoa powder, baking soda, and salt.
 
- Gradually add the dry ingredients to the wet, mixing until just combined.
 
- Fold in the chocolate chips.
 
- Scoop about 2 tablespoons of dough and flatten slightly. Place a square of chocolate in the center and wrap the dough around it, sealing completely.
 
- Place on baking sheet with enough space between each cookie. Chill for 10 minutes for best results.
 
- Bake for 10–12 minutes until edges are set but centers are still soft.
