  • 1 cup mini-chocolate chips

  • 1/2 cup unsalted butter, at room temperature
  • 3 large eggs
  • 1 1/2 cups peanut butter (smooth or chunky)
  • 1 tablespoon vanilla extract
  • Candy eyes (optional)

Instructions

  1. Preheat Oven: Pre-heat the oven to 350°F and line two baking sheets with parchment paper or Silpat baking mats to prevent sticking and ease cleanup.
  2. Cream Butter and Sugars: In the bowl of a stand mixer fitted with the paddle attachment, cream together the sugar, brown sugar, and unsalted butter until the mixture is light and fluffy, which usually takes about 2-3 minutes on medium speed.
  3. Add Wet Ingredients: Beat in the eggs one at a time to ensure even mixing. Then add the peanut butter, vanilla extract, baking soda, and salt, beating until everything is well combined and smooth.
  4. Combine with Dry Ingredients: Gradually add the oats and mix until just combined. Fold in the mini M&Ms and mini chocolate chips evenly throughout the dough.
  5. Scoop Dough: Using a spoon or cookie scoop, place 2-3 tablespoon mounds of dough onto the prepared baking sheets, spacing them at least 2 inches apart to allow for spreading during baking.
  6. Bake Cookies: Bake the cookies in the preheated oven for 12-15 minutes, until the edges are set and lightly golden.
  7. Cool: Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes to firm up before transferring them to a wire rack to cool completely. Optionally, press candy eyes onto the cookies before the dough sets for a fun monster effect.
