Instructions

  1. Prepare Spaghetti: Cook spaghetti in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside for later use.
  2. Sear and Cook Chicken: Heat olive oil in a large skillet over medium heat. Season bite-sized chicken pieces with paprika, Italian seasoning, salt, and black pepper.   3. Sauté Aromatics: In the same skillet, melt butter over medium heat. Add the finely chopped onion and cook for 3–4 minutes until softened. Stir in the minced garlic and cook for an additional 30 seconds until fragrant and aromatic.
  4. Prepare Sauce: Pour in chicken broth and heavy cream, stirring well to combine all ingredients. Lower the heat and let the sauce simmer gently for about 5 minutes, allowing it to thicken slightly.
  5. Combine Pasta and Chicken: Return the cooked spaghetti and chicken pieces to the skillet. Toss everything thoroughly to coat the pasta and chicken evenly with the creamy sauce.
  6. Melt Cheese: Evenly sprinkle shredded Monterey Jack cheese over the pasta mixture. Cover the skillet and let the cheese melt for 2–3 minutes to create a rich, cheesy layer.
  7. Finish and Serve: Remove the skillet from heat. Garnish the dish with freshly chopped parsley and serve immediately while hot and delicious.
