Ingredients

Scale

Brownie Base

  • Box brownie mix, store bought brownies, or homemade brownie recipe (amount as needed for base)

Peanut Butter Topping

  • 1/2 cup sweetened condensed milk
  • 1/2 cup creamy peanut butter
  • 1 teaspoon pure vanilla extract
  • 5 tablespoons water

Oreos

  • 20 Oreos, crushed

Other Ingredients

  • Jar of hot fudge sauce (about 1 cup)
  • Moose Tracks ice cream (1 quart)
  • Chocolate syrup (for drizzling, optional)

Whipped Cream

  • 1 cup heavy cream
  • 2 tablespoons sugar
  • 1 teaspoon pure vanilla extract

Instructions

  1. Prepare Brownie Base: Bake brownies from a box mix or homemade recipe as directed, then allow them to cool completely before assembling the cake layers to prevent melting and ensure structural integrity.
  2. Make Peanut Butter Topping: In a small saucepan over low to medium heat, combine condensed milk, peanut butter, and vanilla extract. Stir continuously until the mixture is smooth and heated through. Gradually add water one tablespoon at a time until the desired pourable consistency is reached. Set aside to cool slightly.
  3. Whip Cream: In a medium bowl, combine heavy cream, sugar, and vanilla extract. Using a handheld or stand mixer, beat on medium-high speed until soft to medium peaks form. Cover and refrigerate until ready to use.
  4. Crush Oreos: Place Oreos in a resealable plastic bag and crush them using the back of a metal ladle or a rolling pin. Adjust texture to your preference, either chunky or finely crumbed.
  5. Assemble Base Layers: Spread the hot fudge sauce evenly over the cooled brownie base. Heat the hot fudge briefly in the microwave (about 30 seconds) if needed to make it easier to spread.
  6. Add Peanut Butter and Oreos: Drizzle the peanut butter sauce on top of the hot fudge layer. Optionally swirl the two sauces together for a marbled effect. Sprinkle the crushed Oreos evenly over the peanut butter layer and gently press them down to embed them slightly into the fudge. Freeze the layer for approximately 15 minutes to set. Meanwhile, remove the Moose Tracks ice cream from the freezer and leave it on the counter for about 15 minutes to soften.
  7. Layer Moose Tracks Ice Cream: Scoop the softened Moose Tracks ice cream over the Oreo layer and spread it evenly using a spatula. Drizzle with chocolate syrup if desired. Return the cake to the freezer for another 15 minutes to firm up this layer.
  8. Add Whipped Cream: After removing the cake from the freezer, spread the chilled whipped cream or cool whip evenly on top. Sprinkle additional crushed Oreos over the whipped cream for added texture and flavor.
  9. Final Freeze: Cover the cake tightly with plastic wrap or aluminum foil and place it in the freezer for several hours or preferably overnight to allow the layers to fully set and meld together.
  10. Serve: When ready to serve, remove the cake from the freezer and let it sit at room temperature for about 10 minutes to soften slightly. To make slicing easier, dip a sharp knife in hot water before cutting each slice.
  11. Storage: Store any leftovers covered in the freezer for up to two weeks to maintain freshness and texture.

Notes

  • Make the layers ahead of time and assemble when ready to serve for convenience.
  • Use either a box brownie mix or store-bought brownies for the base layer to save time.
  • If baking homemade brownies, ensure they have cooled completely before assembling the cake to prevent melting the ice cream.
  • Let the Moose Tracks ice cream soften on the counter for about 15 minutes before spreading to ensure easy handling.
  • Freeze the completed ice cream cake for a minimum of a few hours (ideally overnight) to set properly before serving.
  • To ease slicing, heat your knife in hot water and dry it before cutting the cake.
