Ingredients

Scale

Chicken

  • 2 large chicken breasts (room temperature), cut in half lengthwise to create 4 thinner pieces
  • 1 tbsp olive oil
  • 1 tbsp butter
  • Salt to taste
  • Black pepper to taste
  • 1/2 tsp garlic powder

Sauce

  • 1/2 medium onion, finely chopped
  • 3/4 cup chicken broth
  • 1 package (5.2 oz) Boursin fine herbs & garlic cheese
  • 1 to 2 tbsp chopped fresh parsley (optional)

Instructions

  1. Prepare the chicken: Cut chicken breasts in half lengthwise to create thinner pieces. Season both sides evenly with garlic powder, salt, and black pepper to ensure maximum flavor throughout.
  2. Sear the chicken: Heat olive oil and butter in a large skillet over medium-high heat until hot and melted. Add the seasoned chicken and sear for 5-6 minutes on each side, or until golden brown and cooked through. Transfer cooked chicken to a plate and set aside.
  3. Sauté the onions: Using the same skillet, add finely chopped onion and sauté over medium heat for about 5 minutes, stirring occasionally until softened and lightly browned. Drizzle a bit of olive oil if the pan gets dry. Letting the onions get slightly golden enhances their sweetness.
  4. Make the sauce: Add chicken broth and Boursin cheese to the sautéed onions. Stir gently until the cheese melts completely and the sauce becomes smooth. Allow it to bubble and thicken for about 5 minutes, then stir in fresh chopped parsley if using.
  5. Combine chicken and sauce: Return the cooked chicken and any accumulated juices to the skillet. Warm through for 2-3 minutes to allow the sauce to thicken further around the chicken. If sauce is too thick, add a splash more chicken broth. Adjust seasoning with salt and pepper as needed. Serve immediately.

Notes

  • Room temperature chicken cooks more evenly and stays tender.
  • Adjust the amount of garlic powder and black pepper based on your preference.
  • Using fresh parsley adds a bright herbal note but can be omitted if unavailable.
  • If Boursin cheese is unavailable, a mixture of cream cheese and garlic-herb seasoning can be a substitute.
  • This dish pairs well with mashed potatoes, steamed vegetables, or a light salad.
