Dry Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt (sea salt or kosher salt preferred)
Wet Ingredients
- 6 medium sized ripe bananas, mashed (about 2 cups)
- ½ cup (1 stick) butter, melted
- ½ cup packed light brown sugar
- ¼ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Other
- Preheat Oven: Preheat your oven to 350°F (175°C). Line muffin pans with 18 muffin liners and set aside.
- Mix Dry Ingredients: In a small bowl, whisk together the flour, baking soda, baking powder, and salt until well combined. Set aside.
- Combine Wet Ingredients: In a stand mixer bowl, add the mashed bananas, melted butter, brown sugar, granulated sugar, eggs, and vanilla extract. Beat on medium speed for 3 minutes until smooth and fully incorporated.
- Add Dry Ingredients: Add the dry ingredients to the wet mixture and mix on low speed just until combined, ensuring no flour streaks remain. Scrape the bottom of the bowl to mix any stuck flour or batter.
- Warm Nutella: Place Nutella in a microwave-safe bowl and heat for 30 seconds or until it becomes thin and easy to swirl.
- Fill Muffin Cups: Spoon the batter into the muffin liners, filling each about ¾ full. Add about 1 teaspoon of warmed Nutella on top of each muffin and use a toothpick or knife to gently swirl the Nutella into the batter.
- Bake: Bake the muffins in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Cool and Serve: Let the muffins cool in the pan for 15 minutes, then remove them to a wire rack to cool completely. Enjoy warm or at room temperature.
Notes
- You need about 2 cups of mashed bananas, which is roughly 6 medium-sized bananas.
- Use a stand mixer for effortless mixing, or a handheld mixer or whisk if preferred.
- Ensure Nutella is warmed slightly to make swirling easier.
- These muffins stay fresh stored in an airtight container at room temperature for up to 3 days or freeze well for up to 2 months.
- To make them gluten-free, substitute the all-purpose flour with a gluten-free flour blend.
